TORTILLA CUPS WITH MAMA HELGA CHEESE

A crispy cold appetizer that’s quick and easy to prepare.

Ingredients:

  • 3 tortillas
  • A little oil (for greasing the muffin tin)
  • 200 g sour cream
  • 100 g finely chopped Mama Helga Edamer cheese
  • 100 g Pastir pancetta

Cut each tortilla into squares so that you get 4 pieces from one tortilla. Grease a muffin tin with a little oil, then press the tortilla squares into the cups. Bake at 200°C for about 5 minutes, just until they become lightly golden and crisp. Fill the baked tortilla cups with finely chopped pancetta, Mama Helga Edamer cheese, and sour cream. Place a slice of Pastir pancetta on top of each cup, then return them to the oven for a few more minutes. Sprinkle with dried rosemary, let them cool slightly, and serve. Enjoy!

OFENKARTOFFELN

Crispy on the outside, soft on the inside, filled with creamy bites and melted cheese.

Ingredients:

  • 3 medium-sized potatoes
  • A little salt
  • 1 tablespoon cream cheese
  • 100 g Mama Helga Gouda cheese
  • 50 g Pastir beef prosciutto
  • Spring onions

Wash the potatoes, prick them with a fork, sprinkle with a little salt, and bake at 220°C for about 40 minutes (depending on your oven). Once baked, scoop out the inside of the potatoes. Mix the removed potato flesh with the finely chopped ingredients. Fill the potatoes with the mixture, grate additional Mama Helga Gouda on top, and return them to the oven for a few more minutes, until nicely golden. Finish by sprinkling with chopped spring onions. Simply irresistible.

PUFF PASTRY COCKTAIL BITES FILLED WITH MAMA HELGA CHEESE

Crispy on the outside, soft on the inside — and the Mama Helga cheese gives them a rich, full flavor that everyone notices.

Ingredients:

  • 350 g flour
  • 1 teaspoon salt
  • 75 ml oil
  • 180 ml lukewarm water
  • 250 g margarine
  • 1 egg (for brushing)
  • Mama Helga cheese, cut into small cubes

Combine the flour and salt, then add the oil and lukewarm water. Knead into a medium-soft dough. Shape into a ball and let it rest for 5–10 minutes.

Roll the dough into a square and grate 1/3 of the cold margarine over the top. Fold the dough (bring the sides to the center, then fold over once more), then fold again lengthwise.

Refrigerate for 30 minutes.

Repeat the process two more times, chilling the dough in between.

On the fourth roll, roll the dough out to a 40×40 cm square and cut into small squares (about 4 cm each).

Place a cube of Mama Helga cheese on each piece, fold diagonally, and arrange on a baking tray.

Brush with beaten egg, sprinkle with sesame seeds, and bake at 220°C for about 15 minutes, or until golden brown.

SAVORY CORNBREAD BITES WITH MAMA HELGA CHEESE AND PASTIR “DUVAN” CRACKLINGS

Perfect little bites for a proper meze spread.

Ingredients:

  • 150 g Mama Helga Gouda
  • 80 g Pastir “duvan” cracklings
  • 80 g Pastir kajmak
  • 80 g Pastir fresh cheese
  • 3 large eggs
  • 160 ml thick yogurt
  • 50 ml oil
  • 80 g all-purpose flour
  • 40 g yellow corn flour
  • 40 g cornmeal (polenta)
  • 1 baking powder
  • A pinch of baking soda

In a mixing bowl, combine the Pastir kajmak and fresh cheese until smooth. Add the eggs, yogurt, and oil, and mix well until fully combined. Then add all the flours, baking powder, and baking soda, and mix briefly. Finally, fold in the diced Gouda and the “duvan” cracklings, stirring gently. Divide the mixture into muffin cups in a muffin tray.

Bake at 180°C for about 20 minutes, or until nicely golden. Let them cool slightly, then serve with Pastir cured meats, extra slices of Mama Helga cheese, and sides like olives, ajvar, walnuts, and fresh tomatoes.

PASTIR BITES - PASTIRIĆI

Tasty, gourmet, healthy, and ultra-fast Pastir bites (Pastirići). Ingredients:

  • 700g Pastir yellow cheese (one pack)
  • 1 jar of green olives
  • 1 jar of black olives
  • 300g Pastir prosciutto or other meat, sliced thin: Pastir roasted ham, Pastir salami, Pastir sausage, Pastir dried neck, Pastir pancetta
  • 3 cherry tomatoes
  • Olive oil
  • Basil

Start by preparing decorative toothpicks. Slice the cherry tomatoes in half. Cut the cheese into cubes. On the toothpicks, alternate green or black olives, a folded slice of cured meat, half a cherry tomato, a cube of cheese, the other half of the cherry tomato, or a similar combination. Arrange them as your imagination dictates. Keep the bites submerged in olive oil until serving. Before serving, sprinkle with basil. Enjoy!

PASTIR COLORED BALLS

Simple and perfectly delicious balls made with 3 types of Pastir cheese and spices are a great treat and decoration for a feast, festive lunch or dinner, cocktail, or party. You can serve them in paper cups, on crackers, or slices of French bread. Ingredients:

  • 400g or one pack of Pastir cottage cheese
  • 200g Pastir mature cheese
  • 100g Pastir yellow cheese
  • 1 small onion
  • Salt
  • Olive oil
  • Spices of choice: parsley, sweet or hot paprika, oregano, garlic, sesame, basil, caraway, etc.

Mash the mature cheese with a fork and mix with the cottage cheese and finely chopped onion in a bowl. Using a mixer on the lowest speed or by hand, mix and combine. Shape the mixture into balls. Mix each spice separately in a small bowl with olive oil. Roll each ball in one spice and arrange them decoratively on a serving tray or board. Grate some yellow cheese and roll part of the balls in the grated cheese. Enjoy!
